Excess Produce: how to make herb cubes

In our series on what to do with excess produce, we look at a great solution for storing excess herbs

You’ll need:

– Selection of herbs such as rosemary, thyme, oregano, sage
– Chopping knife, herb scissors or kitchen scissors
– Chopping board
– Ice cube tray


– Wash and chop herbs
– Place herbs in ice cube tray, filling about halfway
– Cover with olive oil
– Freeze
– The herb cubes will store in the freezer for around 6 months
