    I mulched my carrots over winter once…mice ate them. They didn’t touch the parsnips though!

    Parsnips–yum! I dice them and roast with potatoes/turnips/sweet potatoes/bell peppers…When roasted the sugars carmelize and they are chewy, gingery, sweet. Real treat! Jerusalem artichokes–I pressure cook them a few minutes then the skins slip off easily. I dip them in soy mayo and enjoy the artichoke-ness plus their unique sweetness. Great tips on all. Thanks!
